They’re known for their more experimental approach, focusing on innovative fermentation techniques, transparency in their work, and ensuring positive community impact for their smallholder partners. For this lot, sorted cherries are fermented with Koji culture and pulped oranges, also grown by partner farmers, which creates additional income streams.
