This coffee comes from the Typica Mejorado variety, a unique cross between Bourbon and a traditional Ethiopian heirloom. It’s a low-yielding plant with an elegant tree structure similar to Gesha, which already hints at its quality. In the cup, it really shines -expect bright red fruit notes, a natural sweetness, and soft, delicate floral aromatics.
At harvest, Luz Helena and her team take a hands-on, quality-first approach, picking only the ripest cherries at peak maturity. Once harvested, the cherries are brought to La Leona’s sorting area, where they’re carefully hand-sorted and floated to remove any underripe, low-density, or defective fruit. This extra attention ensures only the best cherries move forward.
From there, the selected cherries are transported to the La Pradera processing center in GrainPro bags or other suitable containers to protect their freshness and integrity along the way. For this particular lot, the cherries undergo a 45-hour aerobic fermentation. This controlled process is designed to highlight the coffee’s natural character rather than overpower it.
The result is a cup that's as juicy as it is expressive - layered, sweet and complex, with flavours that clearly reflect its unique variety and meticulous processing.
