PROCESS: Wine Yeast, Co-fermentation with Peaches

The meticulous process starts with hand-harvesting the ripest Pink Bourbon cherries at peak ripeness and transporting them to La Pradera in grain pro bags to preserve their freshness. Once there, the cherries are floated to remove any low-density beans, then undergoing a carefully monitored 72-hour dry anaerobic fermentation with pulp on and enhanced by real peaches and wine yeast for extra complexity.

After fermentation, the cherries are gently dried to lock in their vibrant character. What we get is a coffee bursting with peachy stone fruit sweetness: naturally vibrant, fragrant, and reminiscent of summer in a cup!
