PROCESS: Washed

This coffee comes to us from the rolling hills of Gedeb, Yirgacheffe. Smallholder farmers wait for the cherries to turn fully red and sweet before picking - patience is part of the process here. Those cherries travel no more than 40 minutes to reach Chelbesa washing station, keeping them fresh from tree to tank.

From there, it's a classic washed process: pulped and density-graded in water, fermented for 72 hours, then soaked, rinsed, and laid out to dry slowly over ten days in thin, even layers.
