This coffee is sourced from husband and wife duo, Wildan and Atieq Mustofa at the Frinsa Estate in West Java, Indonesia - our first Indonesian coffee! 

Since starting in 2010, they’ve focused on quality-driven, fully washed coffees; standing out in a region more known for wet-hulled processing. With everything on-site at 1400 masl, they oversee the entire process all the way from harvest to export.

This particular lot uses a unique extended fermentation process. After sorting, the cherries are fermented for a few days with Lactobacillus, a naturally occurring, beneficial bacteria that helps build acidity and clarity. They’re then pulped, and during drying, Rhizopus (a type of food safe mould often used in fermentation) is introduced and the coffee is covered to continue developing flavour. It’s then slowly dried over 7–10 days, resulting in a juicy, complex, expressive cup with plenty of depth.
